The chemical name of vitamin C is (2R)-2-[(1S)-1,2-dihydroxyethyl]-3,4-dihydroxy-2H-furan-5-one , with the molecular formula C₆H₈O₆ and a molecular weight of 176.12 g/mol (NCBI 2011a). Ascorbic acid is often used as a food additive and is known under the label E300 .

Linus Pauling and vitamin C: Linus Pauling, two-time Nobel Prize winner, was one of the best-known advocates of high-dose vitamin C to promote health. He believed that vitamin C strengthens the immune system, protects against cardiovascular disease and can improve the quality of life. He became particularly well-known for his hypothesis that high doses of ascorbic acid could prevent colds and even prevent cancer.
